While judging for the Eat Out Woolworths Restaurant Awards 2022, Anna Trapido gained respect for the X-factor that an excellent waiter brings to the dining experience.

As an Eat Out Restaurant Awards judge, I was treated to many lovely meals and met many wonderful waiters, but there were two meals that stood out for me as examples of socially significant, truly superb service. These existed at opposite ends of the location and decor spectrum. One, at Forti's Bar and Grill, took place in a plush penthouse with panoramic views across the jacaranda forest of posh Pretoria East. The other, at Urban Playground in Cape Town, was inside a converted garage on a Maitland main road with a backing track of incessant taxi beep-beeps.
At the former, my waistcoated waiter was a veteran of 39 years. At the latter, I was served by a tattooed teenager clad in skater gear. Superficially, the individuals and eateries could not have been more different. And yet, they were strikingly similar in the ways in which they understood the importance and honour involved in hosting others. Here's how.
