With just seven common ingredients and a little extra attention and care, it’s quite easy to cook up an irresistible version of one of the heartiest, most satisfying and versatile French culinary classics.
To collaborate on an authentic recipe, we chose Jacques and Lysielle Cariot of Bleu Provence in Naples, Florida. Fortunately for denizens of the southern Gulf Coast, when the Cariots settled there in the late ’90s they opted out of early retirement to open a restaurant evoking the spirit of Provence, where Lysielle grew up. She runs the kitchen, while Jacques mans the front of the house. He also developed their destination-quality wine program, a Wine Spectator Grand Award winner since 2015.
