As the year turns toward Christmas, ovens come alive with stollen bread, panettone, ginger cookies, yule logs, mince pies etc, traditional bakes that continue to evolve through regional twists, flavour infusions and refined presentations. Halloween? Total playground for dessert lovers. Everything's either shaped like a monster, covered in chocolate or tastes like pumpkin spice, showcasing the fun and visual side of baking artistry. Today's bakery professionals are not just preserving customs, they are reimagining them. According to Chef Kinjal Rathod, Chef de Partie CDP at The Leela, Gandhinagar, Gujarat, "Ingredients like cashews, ghee, cardamom and saffron adapt beautifully into modern desserts like bonbons, cheesecakes and fusion tarts."
