Buckle up! Warmer days are here and the big trend in white wines isn't as easy a bar call as, say, "Marlborough sauvignon blanc" or "prosecco." Today's in-demand whites are defined more by their taste than by the grape they're made with or the place they come from. They might have stony flavours that make you think of mineral waters, like Badoit or Vichy Catalan. They might have subtle citrus flavours - lemon peel or lime zest. They also have a sheer quality: think watercolour more than poster paint. Above all, they're dry and refreshing - perfect to drink outdoors, or indoors with the spring sunshine flooding in and the windows open.
