Sync only Documents to iCloud

I've set iCloud Drive to sync my Desktop & Documents folders, but would like to switch off syncing my Desktop. How can I do that?

Even macOS 26 (Tahoe) doesn't give you such fine control of that option for iCloud Drive. You can either sync both of them together, or neither.
