Fluffy protein pancakes MAKES 6

INGREDIENTS
150g self-raising flour

1 tsp baking powder

2 tbsp Vital Proteins Collagen Peptide powder

1 tbsp caster sugar

A pinch of sea salt

2 medium eggs

130ml whole milk

A knob of butter

TO SERVE

2 tbsp Greek yoghurt

2 bananas, sliced

1 tbsp mixed seeds

A handful of raspberries

1 tbsp honey

METHOD
Add the flour, baking powder, collagen powder, sugar and salt to a large bowl and mix to combine.

Crack in the eggs and whisk, then add the milk and whisk until silky smooth.

Heat a small knob of butter in a nonstick frying pan until sizzling. Add spoonfuls of batter until you have a 20cm-sized pancake.

Cook until golden and bubbles start to form on the surface, then flip and cook the other side.
