Just when you thought you couldn't improve on the classic that is mac and cheese, avocado sweeps in and makes everything better.

SERVES FOUR TO SIX
500g macaroni (you can also use rigatoni)
For the avocado sauce
2 large avocados, peeled and stoned
1 clove garlic
2 Tbsp lime juice Salt and pepper, to taste
For the white sauce
2 Tbsp butter
3 Tbsp flour
1½ cups low-fat milk
1 cup strong white Cheddar cheese, grated
Salt and pepper, to taste
