BAKING CLASS: RED VELVET CUPCAKES AND CAKES Reviewed by Ilicia Alias, Special Projects Writer
“When I was given the option to choose a class from the website, I knew I wanted something that had to do with baking since I’ve developed a love for cooking and baking after watching Masterchef. Of the 17 different types of baking courses to choose from (macaroon, bread, decorating, etc), I finally decided on one that suited my weekend schedule. Located in a quiet neighbourhood in Kuchai Lama, the studio look like it came out of a cooking show with ovens and stoves that look brand spanking new! I was greeted by the instructor, Yee Laine, a baking extraordinaire with years of experience teaching students to master baking. We were up for making red velvet cake and cream cheese icing which I was excited to learn cos the ones I’ve baked before never seemed to turn out right; it was always either too sweet, too dense or too dry. Yee Laine began by going through the types of ingredients that we were going to use while giving us tips and tricks along the way. She then taught us more about how different ingredients can cause the mixture to turn out differently. One tip I’m glad I picked up was to always use a plastic jug instead of a bowl for better control of the batter and to use a whisk instead of a mixer to avoid causing the batter to turn hard.
