HUMBLE BEGINNINGS

“When I was a little girl, my dad worked as a chef at the Sandton Sun hotel in Johannesburg, while I stayed with my mom at our home in Loskop, just outside Estcourt in KwaZulu-Natal. I don’t have any brothers, so there was no one to look after the family’s livestock, except for me,” Nicole shares. During her days spent in the field, Nicole would catch birds or go hunting for rabbits and then cook them over an open fire. Rural as it may seem, these experiences sparked her love for cooking. “Your beginnings influence your palate forever. Many years before Nicole was born, I also herded my family’s livestock. That’s where I developed my love for good quality meat,” Nick weighs in. He adds that while people love his lamb recipes – which include lamb shank, knuckle and curry – it is his goat meat they should try. “We used to eat a lot of goat meat back in the day, so modern, urban people don’t know what they are missing when they reject it. And, though I can cook in any style, there is something wonderful and unique about traditional flavours,” he gushes.
