Like other chefs before him, Britain’s Heston Blumenthal understands the impact of sound on taste. Just as childhood food can trigger long-forgotten memories, sound is effective in creating a memorable dining experience. His “Sound of the Sea” dish – featuring seafood and edible seaweed on a mound of tapioca “sand” – was first served at Blumenthal’s The Fat Duck restaurant in Berkshire to the sound of breaking waves in 2007.
