60ml double cream
Bunch fresh baby/small beetroot
Bunch fresh yellow baby/small beetroot
Bunch fresh Candy baby/small beetroot
Maldon sea salt
Balsamic glaze
Handful of pea shoots
1 tbsp chopped thyme
115g soft butter
175g plain flour
1 tbsp water
