STICKY LEMON & HARISSA CHICKEN DRUMSTICKS

SERVES 4

PREP 10 MINS COOK 45 MINS

• 2 lemons, 1 zested and juiced, 1 sliced

• 1/3 cup soy sauce

• 2 tbsp harissa paste

• 1 tsp paprika

• 4 cloves garlic, crushed

• 8 chicken drumsticks

• 6 corn cobettes

• 1 tbsp olive oil

• 1 red onion, cut into wedges

• 200g shop-bought coleslaw mix

• 4 damper rolls, to serve

1 Combine lemon juice, zest,soy sauce, harissa, paprika and garlic in a large bowl. Add drumsticks and toss to coat. Allow to marinate for 20 mins if time permits.

2 Transfer chicken to a large tray. Add corn and drizzle with oil.

3 Cook in a 190°C preheated oven for 45 mins, adding onion and lemon slices halfway.

4 Make coleslaw according to packet instructions.

5 Serve drumsticks with coleslaw and damper rolls on the side.

ROASTED SALMON NICOISE

SERVES 6 PREP 20 MINS COOK 55 MINS

6 x 200g skinless, boneless salmon fillets

¼ cup olive oil

1.2kg chat potatoes, cut into 1½ cm thick slices

250g punnet cherry tomatoes

1 cup pitted Kalamata olives

300g green beans, trimmed

DRESSING

⅓ cup white wine vinegar

¼ cup olive oil

1 tbsp horseradish cream

2 tsp caster sugar

1 small red onion, halved, thinly sliced

2 tbsp drained baby capers

½ cup chopped fresh parsley

1 Toss salmon with 1 tblsp oil in a large bowl. Season with salt and pepper.
