PIE PERFECT

Grab a pie maker and give these tasty meal-sized pies a go!

BEEF TACO PIES

MAKES 6 PREP 20 MINS COOK 30 MINS

• 1 small onion, finely chopped

• 2 cloves garlic, crushed

• 30g packet taco seasoning

• 500g lean beef mince

• 400g can red kidney beans, drained, rinsed

• 200g jar mild taco sauce

• 6 street tacos

• ½ x 170g packet plain corn chips, crushed

• ¾ cup grated Mexican cheese

• guacamole, sour cream, to serve

1 Heat an oiled, large nonstick frying pan over a medium-high heat. Add onion. Cook, stirring occasionally, until soft. Add garlic and taco seasoning. Cook, stirring for 30 secs. Add beef. Cook, stirring to break up mince for 5-6 mins or until browned. Stir in beans and taco sauce. Cool slightly.

2 Spray a 4-hole (¾-cup capacity) pie maker with olive oil.

3 Lightly press four tacos into holes. Spoon ½ cup of the beef mixture into each case. Top with combined corn chips and cheese. Lightly spray with olive oil. Close lid. Turn on.

4 Cook pies for 8-10 mins until golden. Turn off. Remove pies. Repeat with remaining tacos, beef mixture, corn chips and cheese to make six pies in total.

5 Serve with guacamole and sour cream.

THAI RED CURRY CHICKEN PIES

MAKES 6 PREP 25 MINS COOK 35 MINS

• 800g chicken thigh fillets, trimmed, cut into 2cm pieces

• 150g Swiss brown mushrooms, sliced

• 6 green onions, thinly sliced

• 1/3 cup red curry paste

• 150g broccoli, roughly chopped

• 200ml coconut cream

• 1 tbsp fish sauce

• 3 sheets frozen puff pastry, just thawed

• fresh Thai basil, sliced red chilli, to serve
