PEAR & CHERRY CLAFOUTIS

SERVES 6

PREP 25 MINS COOK 20 MINS

• melted butter, for greasing

• 4 medium ripe pears (800g)

• 1½ cups frozen pitted cherries

• 2 cups pure cream

• 6 eggs

• 1 tsp vanilla extract

• ¾ cup plain flour

• ¾ cup caster sugar

• ½ cup natural flaked almonds

• icing sugar mixture, to serve

1 Grease bases and sides of six ovenproof dishes (1½-cup capacity) with butter.

2 Peel pears. Cut into quarters. Remove cores. Cut into 2cm pieces. Divide among prepared dishes. Scatter over cherries.

3 Whisk cream, eggs and vanilla in a large jug until combined. Add sifted flour and sugar. Whisk until smooth. Carefully pour over pears and cherries. Scatter over almonds.

4 Cook in a 180°C preheated oven for 15-20 mins, or until golden and just firm in the centre. Remove. Stand for 5 mins.

5 Dust warm clafoutis with sifted icing sugar.
