SHEET-PAN SALMON & BROCCOLI WITH SESAME & GINGER

SERVES 4 PREP + COOK 20 MINS

• 4 tbsp toasted sesame oil

• 2 tbsp soy sauce or tamari

• 1 tbsp rice vinegar

• 1 tbsp honey

• 1 piece fresh ginger (5cm), peeled and grated (about 2 tbsp)

• 1 garlic clove, grated

• 500g broccoli, trimmed and cut into florets, thick stems discarded

• 2 long green onions, trimmed and cut on the diagonal into 4cm segments, plus thinly sliced long green onions for garnish

• 1 tbsp olive oil, plus more for brushing

• kosher salt and black pepper

• 4 skin-on salmon fillets (185g)

• ½ lime, for serving

• sesame seeds, for serving

1 Heat the oven to 220°C. In a small bowl, whisk 3 tbsp of the sesame oil with the soy sauce, vinegar, honey, ginger and garlic until smooth. Set the glaze aside.
