Strawberry fields rise & shine

SERVES 6

1 1/2 cups plain flour 1 tablespoon caster sugar 1 teaspoon baking powder Pinch salt 1 1/4 cups milk 2 eggs, separated 1 cup fresh ricotta Butter, for cooking Greek yoghurt Big bowlful of strawberries, sliced Maple syrup, to serve

1 Combine the dry ingredients in a mixing bowl.

Whisk the milk and egg yolks in a jug. Pour onto the dry ingredients and fold together, then crumble the ricotta and stir into the batter.

2 Use an electric mixer to beat the egg whites until medium peaks form. Fold into the batter.

3 Melt a teaspoon of butter in a frying pan over medium heat.

4 Ladle in the batter (depending on the size of your pan - just cook as many as can fit easily). Cook until pancakes puff up and bubbles appear on the surface. Turn over and cook the other side until golden.

5 Serve with a dollop of Greek yoghurt, plenty of strawberries and a splash of maple syrup.

Off-the-vine tomato pasta

SERVES 2

200g spaghetti

¼ cup extra virgin olive oil

1 garlic clove, crushed

4-6 ripe tomatoes off the vine, chopped

Sea salt flakes and freshly ground black pepper, to season

1 bird's-eye chilli, deseeded, chopped (optional)

1 handful torn-up basil leaves
