Cupcakes

Ingredients (Makes: 8-12)

125g baking margarine

125g caster sugar

1/2tsp vanilla extract

2 large eggs

◆ 150g self raising flour

◆Food colour gels and cocoa powder - see next pages

1 Preheat the oven to 190°C, Fan Oven 117 .170°C, Gas Mark 5. Line muffin tins with plain white cupcake cases (or cones) as directed over the page. Put all the ingredients in a bowl.

2 Using an electric whisk, gently whisk everything together. Continue whisking until smooth. Colour and spoon into the cases as directed; smooth the tops and bake for 20-30min, until risen and firm to the touch and lightly golden. Cool on a wire rack.
