Lots of hours in the saddle spent racing or training means one thing is certain for us professionals - we have to eat lots of food.

Most of that food comes in the form of carbohydrates.

As much as Eddie Abbew may disagree, for us carbs are king. In the past few years the amount of carbs being consumed has only increased. I remember just three or four years ago being told to eat 90g an hour and thinking that was a lot. Now in the bunch guys are pushing 120g and sometimes even more.
