TURN UP THE HEAT

Up your grill game this summer and dare to try something a little different on the barbecue

BARBECUE CAULIFLOWER CHEESE

SERVES: 2-3 AS A MEAL, OR LOADS OF PEOPLE AS A SIDE

BARBECUE SETUP: Direct grilling and barbecue roasting

COOK TIME: 50 minutes

● 1 large cauliflower ● 1 small head of broccoli ● Rapeseed or olive (non-virgin) oil, for coating ● Salt and ground black pepper ● 75g butter ● 75g plain flour ● 600ml milk ● 250g Cheddar, grated ● 2 slices of American cheese ● 2 tsp English mustard ● 2 tbsp freshly grated Parmesan

1. Set your barbecue up for direct grilling. Break the cauliflower and broccoli into large florets, toss them in a little oil and season with salt and pepper.

2. Grill the florets directly over the heat for a few minutes until they start to take on a bit of colour. You're not trying to cook them through here, just adding some smoky flavour and char. Transfer the charred florets to a deep baking dish.
