BRYAN CROWNED BEST BAKER FOR SECOND YEAR
IF you've ever been to the Sunday market at The Garage in Chilwell, you might have spotted a very lengthy queue - far longer than any other stall.
The attraction? Breadmill Bakery, a one-man band, aka Bryan Henesey.
The 41-year-old attends on the first Sunday of the month. The line begins at 9.30am, half-an-hour before the event opens to the public, with other traders who can’t wait to get their hands on the freshly baked bread and cakes.
“Within two hours everything's gone,” said Bryan, who has just been crowned Nottinghamshire’s best baker for the second year running.
His bakery is a small unit at Sneinton Market's Avenue C. Sourdough bread is his speciality - loaves of plain, malted, toasted four seeded, rye, white spelt, 50/50 white and wholemeal, and focaccia. Malted cobs are also on sale.
Savoury lovers go for brioche with prosciutto and cheddar or tomato, mozzarella and pesto while sweet-toothed fans snap up rye chocolate brownies, panela custard tarts and cardamom buns with blueberry and custard or chocolate and hazelnut.
Because it's Nottingham Craft Beer Festival this week, it means the return of a stout sourdough, made with ale from one of his Sneinton Market neighbours, Neon Raptor Brewing Company. “It’s like the malted sourdough on steroids,” said Bryan.
