Lazy weekend mornings call for something a bit special. Whether you're feeding a crowd or just enjoying a slower start to the day, a homemade brunch is always a treat. I love these sweetcorn fritters - they're crisp on the outside, fluffy inside, and perfect with a poached egg. Or keep things classic with a one-pan roasted pepper shakshuka, less washing-up, same great flavour. For a sweet option, you can't beat a stack of buttermilk pancakes served with berries, maple syrup or even a dollop of yogurt.

2 peppers

1tbsp olive oil

3 garlic cloves, crushed

2 x 400g can chopped tomatoes
