Fasting with a tasty twist

Farali pancakes

Ingredients

Sama (barnyard millet) 1 cup, kuttu (buckwheat) 1/2 cup, grated coconut 1 cup, grated jaggery 1½ cup, mashed banana ½ cup, a pinch of rock salt, cardamom powder ¼ teaspoon, ghee for greasing and cooking

Method

Clean, wash, and soak the sama and kuttu in separate bowls of water for at least an hour. Once that's done, drain the two and keep them aside. Blend the sama along with ¼ cup of water in a mixer until it's smooth. Similarly, blend the buckwheat with 2 tablespoons of water. Combine the sama paste, the kuttu paste, coconut, grated jaggery, banana, rock salt and cardamom powder in a bowl and mix well.

Heat a non-stick pan, grease it with ghee and pour in a ladleful of the batter, spreading it into circles. Cook the pancakes slowly, adding ghee till the pancakes are golden brown on both sides. Serve hot.

Kakdi koshimbir

Ingredients

Cucumber 1-2, coriander with stalks 1 tablespoon (finely chopped), grated fresh coconut 1 tablespoon, rock salt ½ teaspoon, caster sugar 1 teaspoon, roasted peanuts 2 tablespoons, lemon ½, sunflower oil ½ tablespoon, mustard seeds ½ teaspoon, green chilli 1 (thinly sliced), hing ½ teaspoon, curry leaves 2-3
