OFF the RAILS

Taking two acclaimed chefs out of their kitchens and onto a swaying, narrow-gauge train through the Malay Peninsula sounds like a recipe for chaos. Instead, between the jungle air and the rhythmic clatter of the tracks, André Chiang and Simon Rogan find a new kind of harmony on the Eastern & Oriental Express
The first thing you notice about slow travel is the silence-not the literal kind, mind you, for the Eastern & Oriental Express, A Belmond Train, Southeast Asia is a symphony of rhythmic mechanical percussion and the low, steady thrum of diesel power-but the mental quiet. We are so conditioned to the frantic pace of modern travel that being told the journey from Singapore through the Malaysian heartland to the historic islands of Langkawi and Penang will take three nights feels like a radical act of rebellion. But that is the point. Aboard this storied, emerald green and gold vessel, time isn't an obstacle to be overcome; it is the primary ingredient, simmered slowly as you traverse the countryside.
Stepping on board is a departure from the 21st century. The interiors are a masterclass in colonial-era maximalism: cherrywood cabinetry, intricate marquetry and walls lined with Thai silk. In my State Cabin meanwhile, the daytime lounge, complete with a plush velvet sofa and mahogany fold-down writing desk, is seamlessly transformed into a bedroom with twin beds by a steward while I'm at dinner.Beyond the private quarters, the train presents a series of curated atmospheres. The dining carriages, Adisorn and Malaya, offer a visual counterpoint to the train journey: the first, a wash of soothing green elm reflecting the light-filled Highlands, the second, a sanctuary of maroon rosewood that mirrors the jungle's oscillating shadows. The social pulse of the train is split between two distinct hubs: the Piano Bar, with its jazzage opulence, and the Observation Bar, which is kitted out with a karaoke machine and flows into the open-air teak deck at the rear, offering a front-row seat to the rush of tropical air and the receding tracks.
