Rich, creamy, and indulgent, this soup is the ultimate in comfort food.

SERVES FOUR TO SIX
3 Tbsp butter or olive oil
1 medium onion, chopped
2 medium carrots, chopped
2 stalks celery, chopped
1 Tbsp minced garlic
1 tsp chopped fresh rosemary or ¼ tsp dried rosemary
¼ tsp crushed red pepper flakes
Salt and freshly ground black pepper
3 Tbsp all-purpose flour
1ℓ chicken or vegetable stock
1kg potatoes, peeled and chopped
1 bay leaf
60ml cream (you can also use sour cream or plain yoghurt)
250ml shredded cheese (optional)
