Weeknight chilli

Add a smoky depth to this, using chipotle paste.

PER SERVING 193 cals, 6g fat, 2g sat fat, 14g carbs

SERVES 6

PREP 15 mins COOK 30 mins

* 1tbsp oil

* 2 red onions, chopped

* 1 fat garlic clove, chopped

* 500g pack lean beef mince

* 1tsp each: ground cumin and ground coriander

* 1tbsp chipotle paste

* 400g tin chopped tomatoes

* 1 beef stock cube

* Bunch coriander, stalks chopped, leaves picked and reserved

* Zest and juice 1 lime

* 400g tin kidney beans, rinsed and drained

* Tortilla chips or rice, guacamole, soured cream and tomato salsa, to serve, plus lime wedges

Heat the oil in a shallow casserole or deep frying pan. Fry the onions over a medium heat for 5 mins. Add the garlic and cook for 2 more mins.

Add the beef and fry, breaking up with a wooden spoon, until browned and starting to crisp.

Stir in the spices and chipotle paste, fry for 1-2 mins, then add the tomatoes and a tin of water, the stock cube, coriander stalks and lime zest. Bring up to a fast simmer and cook for 15 mins.

Add the kidney beans and lime juice. Simmer for 10-15 mins, until rich and tender.
