CHINESE ROAST PORK BELLY WITH HOISIN SAUCE

SERVES 4 PREP 20 MINS COOK 50 MINS

• 1kg boneless pork belly, rind scored
• ½ tsp Chinese five-spice
• ¼ tsp garlic powder
• 1 tsp salt
• 1 ½ tbsp Shaoxing wine
• 1 tbsp soy sauce
• 2 tsp sesame oil
• 1/3 cup hoisin sauce
• 2 spring onions, thinly sliced
• 2 tsp finely grated ginger
• steamed rice and bok choy, to serve

1 Pat pork dry with paper towel. Combine five-spice and garlic powder in a small bowl. Rub all over pork flesh. Rub salt into rind. Stand 30 mins.

2 Combine 2 tsp wine, 2 tsp soy sauce and 1 tsp sesame oil in a small jug. Brush over pork flesh.

3 Lightly spray a 7-litre air fryer basket. Place pork, rind-side up in basket. Air-fry 25 mins on 200°C until crackling is crisp. Reduce heat to 160°C. Air-fry 25 mins until pork is cooked (if pork is over-browning, cover with foil).

4 Meanwhile, combine remaining wine, soy and sesame oil in a small bowl. Add hoisin sauce, onions and ginger. Mix well.

5 Serve pork sliced with rice, bok choy and hoisin sauce. Serve with extra onions (optional).

YOGHURT MARINATED CHICKEN WITH LEMON POTATOES

SERVES 4-6 PREP 20 MINS COOK 35 MINS
• 6 (1.2kg) chicken thigh cutlets
• 2/3 cup Greek-style yoghurt, plus extra to serve

• 1kg washed white baby potatoes, halved

• baby cos lettuce wedges, to serve

DRESSING

• 1/3 cup olive oil

• 2 tsp finely grated lemon zest

• 1/3 cup lemon juice, plus wedges to serve

• 4 garlic cloves, crushed

• 1 tbsp chopped fresh oregano or 2 tsp dried

• 2 tsp Dijon mustard

• 1 tsp paprika
