In 2012, Bicolano Cuisine took centerstage in that year's edition of Culinary Journeys at Marco Polo Plaza Hotel, with guest chef Leandro “Doy” Sto. Domingo taking the lead. Fast forward to 2025, Chef Doy is back with his wife, Rachelle, and once again teases our palates with the flavorful zings of authentic Bicolano specials.
Former food columnist Jigs Arquiza and I discussed the Bicol trinity of taro, coconut cream, and chili. The taro (gabi) plant is a very versatile vegetable, whose leaves, stem, and roots or tubers are edible. In Cebu, only tubers are used because our gabi variety contains a greater concentration of a toxin called calcium oxalate, which causes an itchy sensation. This can be minimized by drying and cooking.
