Traditional Irish lamb and all the trimmings top Maguire's menu..

LAMB is traditionally served on Easter Sunday as part of a roast, and Neven Maguire says it doesn't have to be difficult to be delicious.

The top chef recommends a leg of lamb, especially for those cooking dinner for a big group.

However, for those who want meat that's really easy to cook and slice, he says butterfly lamb from the butcher is the best bet.

He told The Star: "Irish lamb is some of the best lamb in the world, it's grass-fed, it's fantastic. I like lamb, lamb is glorious. And what I like to do is cook a leg of lamb with some sliced potatoes and onions.

"It's called Boulangere and then add some stock and some herbs and it's just, I suppose it's a lovely showcase of great Irish produce."
