Whether it's urban rejuvenation in New York, London or Kyoto, a mission to sight the tiger in the jungles of Madhya Pradesh, or just a lazy sprawl in Mykonos, Spice curates a list of the most anticipated openings in 2025.

With the room count slashed from 1400 to 375, expect each one to be bigger and more opulent at this historic art deco hotel on New York’s swanky Park Avenue that is reopening after a multi-million-dollar, eight-year renovation. Even in its new avatar, the city’s grande dame that has hosted famous personalities such as Winston Churchill, Elizabeth Taylor, Charlie Chaplin and Queen Elizabeth II, will retain its iconic artifacts including the original Cole Porter piano and the gorgeous lobby clock, commissioned by Queen Victoria for the 1893 World’s Fair in Chicago. There’s a 30,000-square-foot spa with a gym and an outdoor lounge terrace. Spread across two floors, the signature restaurant, Lex Yard, will be helmed by Chef Michael Anthony. The legendary Peacock Alley bar will return as a swanky new lounge and bar area.
