Issue 03, 2022

Throwing a sort-ofbreakfast, sort-of-lunch shindig for your judgy friends is a big deal, so let’s take a minute to honor that journey. First, to logistics: You’ll need a menu that feeds five or six of your nearest and dearest and also makes you look like a creative genius. These recipes from chef Gabrielle Reyes (@OneGreatVegan), author of Colorful Home Cooking, have all that covered—and they’re vegan—so we’re 90 percent there. Pair them with her brilliant hosting tips to get the best grade in the class. Cheers!

How to Host the Holy Grail of Brunches

Avocado Toast Tater Tots

4 cups frozen tater tots Cooking spray

1 avocado

1 tomato

¹⁄₂ cup microgreens

¹⁄₄ to ¹⁄₂ teaspoon Indian black salt or Himalayan pink salt

1 tablespoon everything bagel seasoning

¹⁄₂ teaspoon red pepper flakes

1 tablespoon hot sauce (optional)

1. Preheat the oven to 400 degrees, and place the frozen tots on a parchment-paper-covered baking sheet before lightly coating them with cooking spray.

2. Bake the tots for 15 minutes, tossing them every 5 minutes, until they're golden brown.

Let them cool for a few minutes before throwing them in a serving dish.

3. Thinly slice the avocado and tomato, and layer them on top of the taters.
