Sweet Meets Savoury

ZUCCHINI AND CHIVES CAKE

INGREDIENTS

For the cake

250 gms maida

180 ml white oil

1 tsp baking powder

Half tsp baking powder

150 gms sugar

3 eggs or 150 ml fresh curd

Half tsp salt

1 tsp pepper powder

Half tsp cinnamon powder

1 cup grated zucchini

3 tsp chopped chives

METHOD

Sift together the maida, baking powder, baking soda, salt, pepper and cinnamon powder. Keep these dry ingredients in a mixing bowl. Grind the sugar to a powder in a mixer. Mix in the eggs and blend well. Next add the oil and blend thoroughly to obtain a smooth flowing mixture. These are your wet ingredients.

Now, slowly mix in the wet ingredients into the dry ingredients, mixing all the time to ensure no lumps form. Mix in the grated zucchini. Mix gently and pour into a baking dish. Garnish with some chopped chives.

Bake in a pre heated oven at 180 degree c for 30-35 minutes. Check with a knitting needle by inserting in the centre of the baking dish. The needle should come out clean. Or else bake further for 2-3 minutes.

Allow it to cool in the oven. If you are using muffin mould for baking then the baking time will reduce to 18-20 minutes. If you want a pure vegetarian option - replace the eggs with fresh curd.

200 gms sugar
180 ml fresh curd
160 ml oil
1 cup grated carrots
4 tbsp freshly grated coconut
