Chocolate Marshmallow Sandwich Cookies

ACTIVE 35 MIN. TOTAL 55 MIN. PLUS CHILLING AND COOLING MAKES 25

1/3 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1/4 tsp baking soda

1/4 tsp kosher salt

1/2 cup unsalted butter, at room temp

1/2 cup sugar

2 Tbsp pure vanilla extract

1 large egg

25 Marshmallows (recipe at right)

1 In bowl, whisk together flour, cocoa, baking soda, and salt. Using electric mixer, beat butter, sugar, and vanilla until fluffy, about 3 min. Beat in egg. Reduce speed to low and add flour mixture, mixing until just incorporated.

2 Divide dough in half. Roll each half between 2 sheets parchment paper until 1/8 in. thick. Refrigerate until firm, at least 30 min.

3 Heat oven to 350°F. Line baking sheets with parchment. Using 24-in. "X" and "O" cookie cutters, cut out shapes and transfer to prepared baking sheets. Reroll, chill, and cut scraps.

4 Bake, rotating baking sheets halfway through, until set, 8 to 10 min. Let cool 5 min. on baking sheets before transferring to wire racks to cool completely. Make sandwiches with marshmallow cutouts.

3 ¼-oz pkgs. powdered gelatin

3/4 cup granulated sugar

1/2 cup corn syrup, divided

2 tsp pure vanilla extract

2 Tbsp confectioners' sugar

2 Tbsp cornstarch

1 In small microwave-safe bowl or measuring cup, whisk together gelatin and 5 Tbsp water and let sit 10 min.

2 Meanwhile, line small rimmed baking sheet with plastic wrap, leaving overhang on all 4 sides.
