APPLE PIE FILO TARTS

MAKES 4 PREP 15 MINS COOK 20 MINS

• 6 sheets filo pastry

• 50g butter, melted

• ½ cup raw sugar

• 1 tsp ground cinnamon

• double thick vanilla custard, to serve

TOPPING

• 2 red apples, cored, thinly sliced

• ⅓ cup golden syrup

• ¼ cup raisins

• ¼ tsp ground ginger

• ½ tsp ground cinnamon

1 Line two oven trays with baking paper.

2 Put one sheet of pastry on a clean surface. Brush with a little melted butter. Sprinkle lightly with combined raw sugar and cinnamon. Repeat layers with rest of pastry and sugar mixture.

3 Cut layered pastry stack into quarters and place on one tray. Cook in a 200°C preheated oven for 20 mins, until golden and crispy. Cool.

4 TOPPING In a bowl, toss apples, syrup, raisins, ginger and cinnamon to combine. Spread over second tray. Cook for 12-15 mins until apples are tender.

5 Spoon warm topping over pastry squares. Serve with custard.
