COOKIES FOR LUNCHBOXES

Fill the biscuit jar, ready for school snack time

DOUBLE CHOC CHIP COOKIES

• 150g butter, softened

• 2/3 cup caster sugar

• 1 tsp vanilla extract

• 1 egg

• 11/2 cups plain flour

• 1/4 cup cocoa powder

• 1 tsp baking powder

• 1/2 cup Milk Chocolate Bits

• 1/2 cup Dark Chocolate Bits

1 Beat butter, sugar and vanilla in small bowl of an electric mixer until light and fluffy. Beat in egg until combined. Transfer to a large bowl.

2 Add sifted flour, cocoa and baking powder. Stir until combined. Use a clean hand to bring mixture together. Mix in chocolate bits with your hand. Transfer to a floured bench. Shape into a log, about 5cm in diameter. Wrap firmly in plastic wrap. Refrigerate until firm.

3 When ready to cook, remove log from the fridge for 15 mins to soften slightly. Cut into 1cm-thick slices. Arrange, 3cm apart, on two large oven trays lined with baking paper.
