LEMONGRASS CHICKEN SLIDERS

MAKES 10

PREP 15 MINS COOK 10 MINS

• 500g chicken mince

• ½ cup panko breadcrumbs

• ¼ cup chopped fresh coriander leaves, plus extra to serve

• 2 green onions, thinly sliced

• 1 stalk lemongrass, finely grated

• 1 tbsp fish sauce

• 2 tsp grated fresh ginger

• ¼ cup vegetable oil

• 10 gua bao steamed buns

• 2 Lebanese cucumbers, cut into matchsticks

• ⅓ cup sriracha

LIME MAYO

• ⅔ cup mayonnaise

• 1 tbsp fresh lime juice

• 2 tsp finely grated lime zest

1 In a bowl, combine chicken, breadcrumbs, coriander, onion, lemongrass, fish sauce and ginger. Shape into 10 patties. Chill 10 mins.

2 LIME MAYO In a bowl, combine all ingredients. Set aside.

3 In a large frying pan, heat oil on medium. Fry patties, in batches, 2 mins each side until golden and cooked through. Drain on paper towel.

4 Meanwhile, steam or microwave buns following packet instructions.

5 Spread buns with lime mayo. Top with patties, cucumber, sriracha and extra coriander.

ROAST BEEF ON MINI CRUMPETS

SERVES 8 PREP 25 MINS COOK 22 MINS

Ingredients

• 1 cup milk, warmed

• 1 tsp dry yeast

• 1 tsp caster sugar

• 1 cup plain flour

• 2 tsp chopped fresh thyme leaves

• 250g beef fillet (see tip)

TOPPING

• ¾ cup creme fraiche

• 1 tbsp wholegrain mustard

• 1 tbsp chopped fresh chives, plus extra to serve

Method

1 Lightly spray a 24-hole mini muffin pan with oil.

2 In a jug, combine milk, yeast and sugar. Set aside 10 mins until frothy.
