LEEK, BACON & EGG TARTS

MAKES 4 PREP 10 MINS COOK 30 MINS

$3.75 PER SERVE

1 Preheat oven to 200°C. Place two oven trays in the oven to preheat.

2 Peel plastic backing from pastry. Stack sheets and gently press together. Cut pastry into four even squares. Place on sheet of baking paper. Cover with another sheet of baking paper. Transfer pastry on paper to hot tray. Place other hot tray on top. Bake 20 mins.

3 Meanwhile, in a frying pan, heat oil on medium. Saute leek and bacon 4-5 mins until leek is tender and bacon is golden. Remove from heat.

4 Gently press down the centre of each pastry square. Spread a little leek mixture over each tart. Make an indent in centre. Break an egg into each recess. Scatter around tomatoes and a little grated cheese.

5 Bake 8-10 mins until eggs are cooked to taste. Serve with dressed rocket leaves.

VARIATION Spread bases of pastry with pesto before adding leek mixture.
