Jazz up a pack of mince with these fast and thrifty winners

DONAL'S SPEEDY DINNERS

Lamb flatbreads with quick pickled slaw

SERVES 4

Enjoy this cross between a Turkish pizza and a late-night kebab.

YOU WILL NEED

400g lamb mince

1 medium egg white

½tsp each ground cinnamon, cumin, coriander

1 garlic clove, crushed

1 large tomato, grated

1 onion, grated

Glug olive oil

4 large shop-bought flatbreads

A few mint leaves, to garnish

For the slaw:

½ head red cabbage, shredded

1 red onion, thinly sliced

4 long green pickled chillies, thinly sliced, plus 4tbsp of pickling liquid

Juice 1 lemon

For the zhoug:

Large handful each coriander and parsley, plus extra to serve

4 long green pickled chillies, stems removed

1 garlic clove

Pinch ground cumin

50ml extra virgin olive oil

HOW TO DO IT

Put the mince, egg white, spices, garlic, grated tomato and onion in a bowl. Season with salt and add a glug of olive oil. Mix well, then set aside.

In another bowl, mix together all the slaw ingredients and set aside.

Whizz the zhoug ingredients, except the oil, in a blender until fine (or use a chopping board or pestle and mortar). Put in a bowl and stir in the olive oil. Season with a little salt and set aside.
