LEMON, GARLIC AND THYME CHICKEN

SERVES 4
● 8 chicken thighs, bone in, skin on ● Juice of 2 lemons ● 1 tsp chicken gravy granules ● 2 garlic bulbs, cut in half but unpeeled ● 2 lemons, cut in half ● A small handful of fresh thyme, finely chopped with a few sprigs to garnish

1. Preheat the oven to 200°C/180°C fan/gas mark 6. Add the chicken thighs to an ovenproof casserole dish.
2. Pour over the lemon juice and sprinkle with the gravy granules (this will give the skin a good colour and crisp texture).
