FOOD & DRINK: Breakfast looking out on to the marina is a perfect way to start your day here. We loved the cook-to-order eggs and buffet options.

One of the most relaxing aspects of this beautiful old palace is its outdoor pool, which offers panoramic sea views.

Inside is the Bar Ingles, which offers cocktails in a unique space designed around the former library and chapel. But the hotel’s piéce de résistance is the Delaunay Restaurant, where you can sample the talents of prestigious Basque chef Benat Ormaetxea.

We enjoyed the Jamon Iberico, a seafood “socarrat” rice - similar to the crispy base on the bottom of a paella - with red shrimp veil and aioli, followed by the fish of the day.
