More or less a month ago, I covered the first day of Cebu Goes Culinary 2025 with the theme “Balik Isla: Foraging in the Philippine Countryside”.
One cluster that caught my attention was Klasika Moderna Kulinarya, which showcased Filipino heritage cuisine — sinugba, tinowa, and kinilaw — reimagined for the world stage.
Two dishes especially stood out for me: Modern Pusô-Hupo, a binaki-shaped pouch filled with rice, humba, and a whole quail egg, and Sig-Pu, a playful take on pusô stuffed with sisig. The moment I saw them, I knew they were award-worthy — and I couldn’t stop wondering how they tasted.
