Ghewar is a traditional Rajasthani sweet made primarily from refined flour (maida), ghee, milk, and sugar syrup. It is deep-fried in a circular mold, which gives it its iconic disc shape with a lace-like, porous texture. Once fried, it is soaked in sugar syrup and topped with rich garnishes like saffron, silver vark, almonds, pistachios, and sometimes rabri (thickened milk).

The tale of Ghewar: Rajasthan's iconic festive sweet

Rajasthan, the land of royal heritage and vibrant culture, is equally rich when it comes to its culinary traditions. Among its many delicacies, Ghewar holds a special place—especially during the monsoon and festive months. This honeycomb-like dessert, soaked in sugar syrup and topped with saffron and dry fruits, is more than just a sweet dish; it is a celebration of tradition, taste, and togetherness.

WHAT IS GHEWAR?

Ghewar is a traditional Rajasthani sweet made primarily from refined flour (maida), ghee, milk, and sugar syrup. It is deep-fried in a circular mold, which gives it its iconic disc shape with a lace-like, porous texture. Once fried, it is soaked in sugar syrup and topped with rich garnishes like saffron, silver vark, almonds, pistachios, and sometimes rabri (thickened milk).

Its intricate design, crisp texture, and melt-in-the-mouth sweetness make it unique among Indian sweets. Ghewar comes in various types: plain ghewar, mawa ghewar, and malai ghewar, each richer than the last.
