Easy, breezy food courtesy of recipe maestro Charlie Bigham

Preheat the oven to 220°C/ 200°C fan/gas mark 7.

Tip your prepared beetroot into a roasting tin, splash with olive oil, season with a small amount of salt and pepper then bake for 25-30 minutes or until tender. Reduce the oven temperature to 200°C/ 180°C fan/gas mark 6.
