WINTER WEEK NIGHT HEROES

MONDAY

Philly cheesesteak

Turn this classic sandwich into a meal by serving with a side salad and hand-cut chips.

Serves 4

Glug of oil

3 onions, sliced

2 packets (150-200g each) beef minute steaks, sliced into strips

3 cloves garlic, chopped

2 Tbsp paprika

1 Tbsp ground cumin

Handful fresh coriander, chopped

1/4 cup chutney

Salt and milled black pepper

2 large baguettes

1/4 cup mayonnaise

300g white cheddar, grated

1. Heat oil in a pan on medium heat. Add onion and sauté for 8-10 minutes or until golden.

2. Add steak strips and brown well for 2-3 minutes.

3. Stir through garlic, spices and coriander. Cook for another 2-3 minutes.

4. Add chutney and simmer gently for 5 minutes. Season.

5. Cut baguettes in half, slice open horizontally and spread mayo on the inside. Halve each to create 4 portions.

6. Divide steak mixture between them and top with a generous helping of cheese.

7. Toast each sandwich in a hot pan or sandwich press until bread is golden and cheese has melted (about 4-6 minutes).

Tuna & potato croquettes

A deliciously different take on fish and chips. Serve with your favourite dipping sauce.

Serves 6 (3 per person)

4-6 medium potatoes, peeled

Oil, for sautéing and deep-frying

1 onion, chopped

3 cloves garlic, finely chopped

1 tsp ground cumin

1 tsp ground coriander

3 cans (170g each) tuna, drained

Handful fresh dill or thyme, chopped

1 egg, whisked

Salt and milled black pepper

Flour, for dusting

Lemon wedges, for serving
