When it comes to deep-frying, your choice of oil can make a big difference in taste and yes, even nutritional value. Many cooks rely on vegetable oil for most of their frying, but my favorite kind is avocado oil (I love Chosen Foods 100% Pure Avocado Oil). This oil has a neutral flavor and a very high smoke point, which means it can be safely heated to a high temperature without any effect on its quality. Plus, it's rich in heart-healthy monounsaturated fats-but remember, this doesn't make deep-frying healthy! While avocado oil is pricier than vegetable oil, you can cut down on the amount you need by using a smaller deep fryer, or you can skip the fryer altogether and lightly pan-fry in a small or medium saucepan instead.
