5 ingredient Italian Dinners

Pasta with Broccoli and Chicken Sausage

Adding chicken broth to your boiling water infuses fresh pasta and broccoli florets with flavor. Add lemon and plenty of Parmesan for a final flourish.

START TO FINISH 30 min.

4 cups low-sodium chicken broth

12 oz. fresh pasta, such as fettuccine or pappardelle

1 1½-lb. head broccoli, cut into small florets

2 links (6 oz.) cooked chicken sausage with Italian flavorings, bias-sliced

1 lemon Grated Parmesan cheese (optional)

1. In a large pot bring broth and 4 cups water to boiling.

Add pasta and broccoli; cook according to pasta package directions, about 4 minutes. Before draining, reserve 1 cup cooking liquid. Drain; return pasta and broccoli to pot.

2. While pasta is cooking, in a large skillet heat 1 Tbsp. olive oil over medium-high. Add sausage; sauté until lightly browned, 2 to 3 minutes.

3. Add sausage and any oil in the pan to pasta mixture. Stir in

1 tsp. lemon zest, 2 Tbsp. lemon juice, ¼ tsp. kosher salt, and enough of the reserved cooking liquid to moisten. Serve with grated Parmesan and additional lemon, if you like. Serves 4.

1 1½-lb. strip steak, 1½ to 2 inches thick

2 large garlic cloves, sliced

¼ cup balsamic vinegar

4 cups baby arugula (3.5 oz.)

⅓ cup shaved Parmigiano-Reggiano cheese

1. Let steak stand at room temperature 30 minutes to 1 hour before cooking.
