Baked breakfast frittata

This is a great source of protein and healthy fats to enjoy for breakfast, lunch or dinner.

SERVES 4 PREP 10 MINS

COOK 15-20 MINS

* 1tbsp vegetable oil

* 75g smoked back bacon, trimmed and diced

* 300g Portabello mushrooms, thickly sliced

* 1 garlic clove, crushed

*200g cherry tomatoes, halved

*75g walnuts, roughly chopped

* 6 medium eggs, beaten

* 50g reduced-fat mature Cheddar cheese, grated

*1tbsp flat-leaf parsley, chopped

You will need:

* 22cm square tin, greased and lined

1 Heat the oven to 160C Fan. Heat the oil in a large frying pan and fry the bacon, mushrooms and garlic for 4-5 mins until softened and golden. Add the tomatoes and 50g walnuts, then cook for a further 1-2 mins. Season.
