Steak salad with walnut pesto

Ditch the chips for this super satisfying low-carb option.

SERVES 2 PREP 10 MINS, PLUS RESTING COOK 8 MINS

* 250g sirloin steak

* 2tsp olive oil

* 100g cherry tomatoes, chopped

* 45g watercress

* 45g blue cheese

For the pesto:

* 1 bunch basil

* 1 garlic clove

* 75g walnuts

* 30g Parmesan

* 150ml olive oil

1 Remove the steak from the fridge 30 mins before cooking. Rub with the olive oil, and season generously.

2 Heat a heavy-based frying pan over medium-high heat and cook the steak for 2-3 mins on each side for medium-rare, or until fully cooked to your liking. Transfer to a plate and set aside to rest.

3 For the pesto, whizz all the ingredients in a food processor until smooth. Toss the cherry tomatoes in 1tbsp pesto.
