Bacon-Cheddar Sheet Pan Biscuits

THESE SHEET PAN drop biscuits are loaded with flavor and easy to make: no folding, shaping, or rising required. Simply mix your dough, drop it in the baking pan, and spread it into one even layer. (You’ll cut the result into individual biscuits after it bakes.) The biscuits are great for bakers at any level, even those with little hands. Any leftover biscuits make next-level breakfast sandwiches. Simply split in half, and add a fried egg and some spinach—the cheese and bacon are already baked in.

Cooking spray

8 oz. thick-cut bacon (about 4 slices), chopped

4 cups all-purpose flour (about 17 oz.)

1½ Tbsp. baking powder

2½ tsp. kosher salt

¾ tsp. baking soda

¾ tsp. black pepper, plus more for garnish

1 cup cold unsalted butter, cubed, plus more for serving

2 cups cold buttermilk

2 tsp. honey

4 oz. sharp cheddar cheese, shredded (about 1 cup)

¼ cup minced fresh chives, plus more for garnish

1. Preheat oven to 450°F. Coat a 13- x 9-inch baking sheet with cooking spray. Line with parchment paper; coat parchment paper with cooking spray.

2. Cook bacon in a large nonstick skillet over medium, stirring occasionally, until crisp, about 10 minutes. Transfer to a paper towel–lined plate using a slotted spoon; set aside.
