WHEN SUMMER ARRIVES and the air has finally thawed, my life and meals move outside. The stove cedes control to the grill on our deck, where my husband and I cook and eat almost every night, surrounded by plants and candles. Sometimes it’s as simple as a few chicken thighs destined to top a grain bowl; other nights it’s more elaborate, like a giant pan of paella nestled in the coals. But even when I decide to be a bit more ambitious in my cooking (or, let’s face it, impress my friends), I want it to be easy: No one’s summer-cooking fantasy involves sweating over the grill, fussing over a too-complicated recipe.
