Fondant frosting has been adding satiny elegance to cakes as a covering medium and for embellishing ornate wedding cakes.

Butter cream is probably the most underestimated of these three frosting mediums, but now more and more cake designers are relying on butter cream to get smooth finishes on their cake designs.

Of course, the refrigerator is one's best friend when working with this medium.
